Asparagus with Cherry Tomatoes and Parmesan

Asparagus
1/2-1 cup cherry tomatoes, halved
1/2 cup shredded parmesan cheese
2-3 tbsp olive oil

How-To
  1. Preheat the oven to 425°
  2. Place halved tomatoes and 2 tbsp olive oil on a baking sheet and bake for about 4 minutes.
  3. Add asparagus and bake for another 10 minutes.
  4. Top with remaining tbsp olive oil and parmesan cheese.
Notes

My family has been really into asparagus lately.  So when I saw an article in a recent Cooking Light magazine on different ways to cook asparagus, I knew I had to try it!  The recipe in the magazine actually called for feta cheese, but parmesan was what I had in the house.  Also, the quantities of the ingredients will vary based on how much you’re making, and so will the length of time you bake the asparagus (bigger/more asparagus = bake longer).  This side turned out really well, and was a nice way to spice up our veggies!
