8-10 pieces of chicken (any cut, skin on)
1 lb red baby potatoes
1/3 cup olive oil
2 cloves garlic
1 tbsp rosemary
1 1/2 tsp salt
1/2 tsp red pepper flakes
1/2 tsp ground pepper
- Place the raw chicken, potatoes, sliced lemon, and sliced onion in a sprayed baking dish (13×9 inches).
- In a medium-sized bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, red pepper flakes, salt, and pepper. Pour mixture on top of the chicken, potatoes, lemon, and onion.
- Preheat the oven to 400°. Bake for 1 hour, or until the potatoes and chicken are cooked through.
I saw a photo of this dish on Pinterest, and I had to try it! Something about the chicken and potatoes with the perfect lemon slices on top drew me in. And the best part is how easy it turned out to be! I’d recommend starting by doing your mise en place (putting in place) — spray the pan, slice the lemon and onion, mince the garlic, and get all your ingredients and measuring utensils out and ready. Then all you have to do is mix up the sauce and put everything together.
The recipe calls for skin-on chicken, but I already had skinless in the freezer so I used that. While the end product was DELICIOUS, I am going to buy skin-on next time I make this dish, as I think it would give it a little extra flavor.
