ingredients
For the pudding:
3/4 cup sugar
2 eggs
1 heaping tbsp apricot jam
1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1 tbsp butter, melted
1 tsp apple cider vinegar
1/3 cup milk
For the sauce:
3/4 cup heavy whipping cream
1 stick butter
1/2 cup sugar
1/3 cup water
2 tsp vanilla extract

The pudding:
- In a mixing bowl, whisk the sugar and the eggs together until the mixture is thick.
- Add the apricot jam and mix well.
- Stir in the melted butter and vinegar.
- Add the flour, soda, and salt and stir into the wet mixture.
- Pour the mixture into a buttered 7×7 inch baking pan.
- Bake at 350° for 30 minutes. If using a 8×11 in pan, bake at 350° for 25 minutes. Make sure to watch the pudding closely. It is done when it’s golden on top and slightly brown at the edges. It will resemble a cake more than a “pudding”.
The sauce:
While the pudding is baking, melt all ingredients together in a sauce pan. Once the pudding is done, pour sauce over immediately. Once the sauce is absorbed into the pudding, serve with a scoop of vanilla ice cream.

In the spring of 2012, both Emily and I studied abroad in Port Elizabeth, South Africa with a group of other students from our school. South Africa is a beautiful country with a unique culture and history. It is also a place with many delicious recipes we had never had before. Malva pudding is one such recipe. It is a rich, warm “pudding” we were often served at large dinner gatherings. Emily and I made this together this weekend, and it was as good as we remembered. It’s heavy on the butter and sugar, but it’s totally worth it for a special treat!
