Malva Pudding

ingredients

Malva PuddingFor the pudding:
3/4 cup sugar
2 eggs
1 heaping tbsp apricot jam
1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1 tbsp butter, melted
1 tsp apple cider vinegar
1/3 cup milk

For the sauce:
3/4 cup heavy whipping cream
1 stick butter
1/2 cup sugar
1/3 cup water
2 tsp vanilla extract

The pudding:

  1. In a mixing bowl, whisk the sugar and the eggs together until the mixture is thick.
  2. Add the apricot jam and mix well.
  3. Stir in the melted butter and vinegar.
  4. Add the flour, soda, and salt and stir into the wet mixture.
  5. Pour the mixture into a buttered 7×7 inch baking pan.
  6. Bake at 350° for 30 minutes. If using a 8×11 in pan, bake at 350° for 25 minutes. Make sure to watch the pudding closely. It is done when it’s golden on top and slightly brown at the edges. It will resemble a cake more than a “pudding”.

The sauce:

While the pudding is baking, melt all ingredients together in a sauce pan. Once the pudding is done, pour sauce over immediately. Once the sauce is absorbed into the pudding, serve with a scoop of vanilla ice cream.

In the spring of 2012, both Emily and I studied abroad in Port Elizabeth, South Africa with a group of other students from our school. South Africa is a beautiful country with a unique culture and history. It is also a place with many delicious recipes we had never had before. Malva pudding is one such recipe. It is a rich, warm “pudding” we were often served at large dinner gatherings. Emily and I made this together this weekend, and it was as good as we remembered. It’s heavy on the butter and sugar, but it’s totally worth it for a special treat!
