Fruit Smoothie with Spinach & Almonds

ingredients

Smoothie 1

1 cup fresh spinach
1 cup strawberries
1/2 cup blueberries
1 banana
1/4 cup almonds
1/3 cup milk
1/3 cup vanilla greek yogurt
5-10 ice cubes, crushed

Combine all ingredients into a blender or food processor, and blend until smooth.

With this spring weather FINALLY coming to Minnesota, I’ve been craving “summer” foods. So one day this week when the thought of warm winter soup for lunch was bringing me down, I decided to stop at the grocery store deli for a salad. The salad turned into the contents of a smoothie. I don’t know how it happened. The fruit was just so bright and pretty and the almonds were right there and the spinach looked so fresh and I knew I had yogurt at home and… well, you get it. I can’t control myself. It all looked so fresh and spring-like, and I’ve been looking forward to warm weather for so long!

The almonds added a slightly different texture to this smoothie, but the little bit of flavor they added was delicious! I had never used spinach in a smoothie before, and I admit I was skeptical, but what they say is true. You can’t taste it at all, and you get the extra added bonus of some veggies! This was a very filling lunch! Enjoy and happy spring!
